Jill's Birthday Cake Recipe

Jill's Birthday Cake Recipe	8oz SR flour 8oz castor sugar 4oz soft margarine 2 eggs medium size 6 fluid oz evaporated milk Half tsp vanilla essence
Method 1 Place all ingredients into a large bowl and beat together with a wooden spoon or electric mixer until pale and fairly soft dropping consistency is formed. 2 Pour into tin 7x11 inches or 8 inch round, base-lined & greased. 3 Bake in oven Reg 4 for 35-40minutes for oblong cake or 50-60 minutes for round cake, until firm in the centre. 4 Cake stores well wrapped in foil or can be frozen. For Jill’s cake shown below Sarah used the above recipe 24 times (12 batches of double mixture in meat roasting tins.). It was covered with a layer of white fondant icing held in place with apricot jam and the coloured squares were stuck on that and then decorated.
